I'm teaching myself Japanese online. I started on the verb tenses (in the form of suffixes) and I THINK I understand everything.

Itadaku means "I humbly partake." Or close to that.

Itadakimasu means "I [now] humbly partake."

So... if you were offered something yesterday, and politely declined, and you spoke of it again today, would it be, "Itadakimasendeshite?"

I think that's right... but I'd just like to confirm it with someone who knows the language.

Dear Kakashi,
"Itadakimasendeshite?" looks like female expression. It is better to say "Itadakimasendeshitaka?" which is rather neutral.
By the way, if you have an online Japanese course, you can post here its url to drain the visitors.
